Beet chips

Beet chips are a healthy and delicious snack that offers a crispy, slightly sweet alternative to traditional potato chips. Here’s a simple recipe to make beet chips at home:

Ingredients:

  • 3 medium beets (red, golden, or a mix)
  • 1-2 tablespoons olive oil (or avocado oil)
  • Salt to taste
  • Optional: black pepper, garlic powder, or rosemary for seasoning

Instructions:

  1. Preheat the oven: Set your oven to 175°C (350°F).

  2. Prepare the beets: Wash and peel the beets. Using a mandoline or a sharp knife, slice the beets into very thin rounds (about 1-2 mm thick). The thinner the slices, the crispier the chips will be.

  3. Season the beets: Place the beet slices in a large bowl. Drizzle with olive oil and toss to coat evenly. Add salt and any optional seasonings like black pepper, garlic powder, or fresh herbs.

  4. Arrange on baking sheet: Spread the beet slices in a single layer on a baking sheet lined with parchment paper. Be careful not to overlap the slices, as this will prevent them from getting crispy.

  5. Bake: Place the tray in the preheated oven. Bake for 15-20 minutes, turning the slices halfway through baking to ensure even crisping. Keep a close eye on them, as they can burn quickly.

  6. Cool: Once the beet chips are crispy and slightly browned around the edges, remove them from the oven. Let them cool for a few minutes on the baking sheet, as they will crisp up even more as they cool.

  7. Serve: Enjoy the beet chips immediately or store them in an airtight container for up to 3 days.

Tips:

  • To ensure even baking, try to cut the beet slices as uniformly as possible.
  • Use a dehydrator if you prefer a lower temperature method that takes longer but results in very crispy chips.
  • Try other root vegetables: You can use the same method for making chips with sweet potatoes, carrots, or parsnips.

These beet chips are great for snacking on their own or as a crunchy side to sandwiches or salads!
